Do I have to cook the jerky at a low temp in the oven after I have dried it? Or will it be safe to eat out of the dehydrator?
I have a nesco dehydrator.I do not put my jerky in the oven after I dehydrate it.Put your jerky in a ziploc and eat a piece whenever you want.I have made at least 50 batches of jerky.Not only do I love jerky but I love experimenting with different spice combinations.I dont know what spices you like but this recipe is my favorite. 155 degrees!!!
1 pound eye of round roast.(trim off any fat and cut it into the right size of pieces for jerky) set aside.
Mix this stuff in a big bowl,
1 big head of garlic(about 15 cloves) pressed or minced very small.
4 TBS Soy sauce
2 TBS Head Country ( Hot ) BBQ Sauce
6 TBS Honey
2 TBS Worchestershire Sauce
2 TBS Teriyaki Sauce
1 Tsp Cayenne pepper ( ground red pepper)
1 Tsp Black pepper
Mix well then add the meat and tumble it around to coat all the pieces.
Put the lid on the bowl and refridgerate for 6-8 hours
Place it in the dehydrator on 155 degrees for 6 hours.
If you don't like spicy,try something else.

Baked Cubed Venison Steak
4 large, cubed venison steaks
Salt and pepper
1 onion (sliced thin)
Flour
Water
1 can beef gravy
1/4 cup vegetable oil
1 tablespoon butter
Heat vegetable oil and butter in heavy skillet or Dutch oven. Salt and pepper steaks and roll in flour. Brown steaks (both sides) in heated oil and cover with sliced onion. Pour beef gravy over all. Cover and bake in preheated oven at 350 degrees Fahrenheit for 1 to 1 1/2 hours. Watch liquid during baking. If liquid gets thick too quickly, add water. Remove when tender and add a little more flour and milk to make more gravy.
